What this solves

Most food-safety advice for Egypt is generic ("be careful"). The koshary-specific question is sharper.

Koshary is safe for vegetarians because the base (lentils, rice, pasta, fried onions, tomato sauce, garlic sauce) is hot and cooked-to-order. The risk is in the toppings (chickpea water, salad) and the kitchen hygiene.
Chains like Koshary El Tahrir and Abo Tarek run multiple branches, central kitchens, and standard recipes. Safest.
Street-corner koshary is fine if turnover is high and refrigeration visible. Skip if both fail.
Unknown shop rule. One question: "Are the chickpeas and lentils in a hot cabinet?" If yes, fine. If they're sitting at room temperature for hours, skip.

How to read the result

The picker scores the kitchen 1–10. 8–10 = great, eat confidently. 5–7 = OK if you're not immunocompromised. Below 5 = skip.

What to look for. Hot cabinet for the chickpea / lentil / rice base. Glass window to the kitchen. High turnover (busy at mealtimes). Visible refrigeration for the salad / tahini / hot sauce.

What to skip. Cold or room-temperature chickpeas sitting for hours. No visible kitchen. Empty at mealtimes. Staff not wearing gloves or hairnets. Flies.

Limitations

The score is a heuristic; chain branches can still fail if the local franchisee cuts corners.
Turnover at off-hours (mid-afternoon Cairo) is naturally lower; the tool compensates for this.
If you have a sensitive stomach, start with chain koshary first and graduate to street corners.
The dish itself is gluten-heavy (pasta), nut-free, and vegan if you skip the garlic sauce.
Spicy sauce (shatta) varies by region. Ask before assuming.

FAQ

Is koshary vegetarian / vegan?

Vegetarian by default (no meat). The tomato sauce is fully vegetarian; the garlic sauce is dairy-free; the crispy fried onions are oil-based. Skip the garlic sauce if you need fully vegan. Most chains offer a "koshary with all sauces" or "koshary without sauce" option.

How much should I pay?

Street corner: 30–60 EGP. Chain: 60–120 EGP. Hotel: 150–300 EGP. The dish is cheap by Egyptian standards; expensive hotel koshary is the same ingredients with a markup.

What's the difference between chains?

Koshary El Tahrir (multiple Cairo branches) and Koshary Abo Tarek (Downtown Cairo flagship + branches) are the two biggest. Both are reliable. The differences are in sauce recipes (Abo Tarek is saltier). 3amo Omar is Alexandria-based.

What about koshary in Luxor and Aswan?

Both cities have chain koshary in downtown. Street-corner options are more limited than Cairo. Expect less variety in toppings. The dish is reliable when you follow the same rules.
